Source: They come from the aromatic leaves of the Curry Leaf tree, which is native to India and Sri Lanka.
Appearance: They are typically small, irregularly shaped pieces (flakes) of dried, dark green leaves.
Aroma and Flavor: They possess the distinctive, complex, and highly aromatic scent and flavor of fresh curry leaves. When cooked (often tempered in hot oil or ghee), they release a mild, slightly pungent, and nutty aroma with subtle notes of citrus and anise. Drying the leaves preserves the flavor, though it is generally less intense than fresh leaves.
Uses:
They are primarily used as a culinary seasoning, especially in South Indian and Sri Lankan cooking.
They are used to temper or "season" dishes like curries, dals (lentil stews), soups, chutneys, and rice dishes.
Since they are dried and flaked, they offer a convenient alternative to fresh leaves, particularly in regions where fresh Karapincha is hard to find.
